Fan, convection and air fryer temperatures

Fan-assisted and convection ovens blow hot air around the food, so they cook faster than conventional ovens. Recipes written for a conventional oven usually need about 20°C (25°F) less in a fan oven. Many UK and Australian recipes already list the fan temperature separately, often marked "fan" or "fan-forced".

Air fryers work the same way at a smaller scale. A common starting point is 25°F (about 15°C) lower than the oven temperature, with the cooking time cut by about a fifth. Check early, because air fryers vary.

Why your oven might not match

Home ovens often run 10 to 25 degrees hotter or cooler than the dial says. An oven thermometer that hangs from the middle rack costs a few dollars and tells you the real temperature, which matters most for baking.

Frequently asked questions

What is 350°F in Celsius?

350°F is 177°C exactly, which recipes round to 180°C. In a fan or convection oven, use 160°C. It's gas mark 4.

What is 180°C in Fahrenheit?

How do you convert Fahrenheit to Celsius?

Subtract 32, then multiply by 5 and divide by 9. For example, (400 − 32) × 5 ÷ 9 = 204°C, which recipes round to 200°C.

What is gas mark 6 in Fahrenheit?
