Why a cup of each ingredient weighs something different

A cup measures how much space an ingredient takes up, not how heavy it is. Flour is full of air, so a cup weighs 120 grams. Sugar crystals pack tightly, so the same cup holds 198 grams. Honey is denser than water, so a cup weighs about 339 grams. That's why there's no single answer to "how many grams in a cup" without knowing the ingredient.

How to measure by the cup accurately

  • Flour and powders: stir to loosen, spoon into the cup until it's heaped, then level it with the back of a knife.
  • Brown sugar: press it firmly into the cup. It should hold its shape when you tip it out.
  • Liquids: use a clear liquid measuring cup on the counter and read it at eye level.
  • Sticky things: oil the cup lightly first so honey, syrup and peanut butter slide out.

Dry-ingredient weights here follow the King Arthur Baking ingredient weight chart, which assumes the spoon-and-level method. Liquids, butter and oats use USDA household measures.

Frequently asked questions

How many grams are in a cup?

It depends on the ingredient, because a cup measures volume and grams measure weight. A cup of all-purpose flour weighs 120 g, a cup of granulated sugar 198 g, and a cup of butter 227 g. A cup of water weighs about 237 g.

What size cup does this converter use?

A US customary cup, which holds 236.6 milliliters. Metric cups used in Australia, Canada and New Zealand hold 250 milliliters, about 6% more.

Why does my flour weigh more than the converter says?

You probably scooped it. These weights assume you spoon flour into the cup and level it off. Scooping straight from the bag packs the flour down and can add 20 to 30 grams per cup.

Is it better to measure in grams or cups?

Grams. A kitchen scale gives the same amount every time, while a cup of flour can vary by 20% depending on how it's filled. Weighing also means fewer measuring cups to wash.
